Brunch with Don Vica
Here’s a simple but scrumptious feast for a lazy weekend. Toast bread, fry eggs, and assemble with olives, parmesan cheese, cherry tomatoes, parsley and extra virgin olive oil

Serves 4
300g tub of Chilli Garlic Pitted Olive Mix
4 thick slices of grain or sourdough bread
60ml extra virgin olive oil
4 eggs, fried
1 punnet of cherry tomatoes, cut into halves
Parmesan, shaved, to garnish
4 parsley sprigs
Tabasco sauce
Rock salt and cracked pepper
1. Toast the slices of bread and drizzle liberally with the extra virgin olive oil.
2. Cut the Chilli Garlic Pitted Olive Mix into halves and press into the oil laden toast.
3. Place a fried egg on top of each slice.
4. Garnish with shaved parmesan, rock salt, cracked pepper, Tabasco, cherry tomatoes and a large sprig of parsley.
